Some plants may be toxic and harmful when eaten raw, and I wondered whether this was the case with eating legumes uncooked.

I performed some research and would want to share what I discovered.

In general, legumes should not be consumed uncooked. Nonetheless, a few legume species, such as peanuts and peas, may be consumed uncooked.

To eliminate toxins from legumes, they must be fully soaked and boiled before consumption.

Since canned beans are already cooked, you may consume them without cooking.

Are Raw Legumes Poisonous?

Most fruits and vegetables are safe to consume uncooked.

So why do practically all legumes need to be cooked, and is it because they are poisonous?

Except for peanuts, green beans, and peas, almost all uncooked legumes are deadly.

Even in trace concentrations, dried and uncooked beans contain Phytohaemagglutinin, a toxin.

How to prepare raw legumes

  1. Soak for at least 5 hours.

  3. Slow cooking beans is not recommended.

Nutritionists suggest soaking beans in water for a minimum of 5 hours.

Most of the time, leaving them to soak for 12 hours is more convenient.

Pour them into a bowl or pot in the morning, for example, and let them to soak all day. Then, in the evening, quickly boil them.

You could even soak them overnight and then boil them for lunch.

Beans must be cooked over high heat. Slow cookers are a popular method for making stews and soups.

Beans are an excellent complement to these dishes. Cooking beans on low heat, on the other hand, will not eliminate the poisons.

As a result, before adding beans to a slow cooker or crockpot, you should first boil them on high heat to thoroughly eliminate the toxins, and then add them to the slow cooker.

This allows the flavors to marinade and blend. You can do anything you want with canned beans, and they don’t need to be pre-cooked.

Poisonous Beans List

When consumed uncooked, most legumes are harmful.

There are, however, certain exceptions. Hence, I’ll explain which beans are toxic and which are okay to consume raw.

In general, all raw and dry beans should not be ingested unless they have been soaked and cooked in a certain manner.

What Happens if You Eat a Raw Kidney Bean?

Kidney beans are among the most readily accessible beans, whether they are maroon-skinned or white kidney beans, often known as white beans or cannellini beans.

Even consuming 4 to 5 uncooked kidney beans can result in stomach pain, diarrhea, and vomiting.

Yet, research has shown that although certain nutrients are lost while cooking, other nutrients may be enhanced.

Tinned beans are kept in a brine to keep them from drying out.

It has also been shown that vitamin C and vitamin B deteriorate when dissolved in water.

As a result, some vitamin C and B are lost.

Beans are normally low in vitamin C but may provide up to 10% of the daily required vitamin B consumption.

As a result, eating freshly cooked kidney beans rather than canned ones has certain nutritional advantages.

Nonetheless, canned beans are an excellent source of fiber, protein, and specific minerals such as manganese and calcium.

Not to add that they are quite handy since they do not need soaking. Tinned kidney beans may be consumed as a side dish or added cold to salads.

Nonetheless, they may be reheated and served with rice and beans, chili, or stews.

What Bean Is Poisonous When Raw?

Anecdotal evidence shows that chickpeas can be consumed uncooked.

Medical doctors, however, advise cooking them first.

Some individuals follow a raw diet or prefer to consume raw foods. Nevertheless, this is not feasible with beans.

As a result, if you are on a raw diet or eat mostly raw food, it is better to limit your intake of cooked beans to a limited amount so that it does not negatively impact your diet.

Should you drain beans? Tinned and home-cooked

When you purchase canned beans, they are held in brine, and you cook them at home for 10 minutes on high heat.

So, should you drain the liquid, and is it OK to consume it or reheat canned beans with it?

In general, draining beans is OK.

The water used to soak or cook the beans, on the other hand, should be discarded.

Soaking and boiling are used to eliminate contaminants that may be present in the water.

The liquid in which canned beans are immersed has a lot of salt, and studies suggest that draining and washing them eliminates up to 41% of the sodium (source).

The brine in canned beans has a mushy consistency and a dull bean flavor that isn’t particularly tasty.

As a result, you may opt to drain it. As you reheat them, some of the liquid may evaporate. As a consequence, the resultant meal has a stronger bean flavor that might dominate the other ingredients.

Draining and washing the beans in water may give the beans a fresher, cleaner flavor.

Why are raw legumes poisonous?

With limited exceptions, raw legumes should never be taken uncooked.

But why is this the case, and what makes them poisonous?

Virtually all raw legumes include phytohaemagglutinin and the toxin lectin.

Toxins are highly toxic compounds that trigger negative responses in the human body.

Similar to how snake venom may be lethal once it enters the bloodstream.

Soaking and heating raw beans, both dry and fresh, breaks down and eliminates the phytohaemagglutinin and lectin, allowing them to be consumed.

Legumes are plant seeds that, in my view, are a defensive mechanism to keep animals and people from eating them.

Fruits and vegetables vary from legumes in that the flesh around the seeds is consumed.

In the case of veggies, you only consume the plant’s roots, stems, and leaves.


What beans and legumes can you eat raw?

In a plant-based diet, black beans, lentils, chickpeas, and other legumes constitute an important source of protein. And you may incorporate them even if you don’t cook. Soaking legumes until mushy and properly washing them may make them safe to consume uncooked.
